Corporate Pastry Sous Chef

Corporate Pastry Sous Chef

Responsible for overseeing all prep production for dessert stations and service. Assists with operations across multiple outlets. Responsible for leading basic preparation procedures.  Oversee all mis-en-place, requiring pastry skills and technique. Ensure consistent excellence in work product. Lead pastry team in time management, task accomplishment with regards to daily prep list. Continuous interaction with pastry staff. Responsible for overseeing station, workplace cleanliness, sanitation and safety.  Understand the philosophy of Mina Group and our partners and adheres to all restaurant policies. Mentors junior staff members. Upholds restaurant standards for quality and cleanliness. This role will require moderate to heavy travel.

Our Ideal Candidate is:

A detail oriented culinary leader who will be a hands-on mentor in the kitchen with the ability to adapt quickly to changes and create an amazing experience for both our guests and our staff. You will assist in leading all pastry operations across both owned and RMA properties, providing insight and guidance to every member of the kitchen staff, and work closely with the Corporate Executive Pastry Chef, executive chefs and corporate culinary and operations teams to further the success of the restaurants. You have expertise in pastry techniques, plating and production, inventory control, labor cost management, an impeccable eye for detail, and a high level of professionalism.

  • Basic Qualifications
    • 4 years’ experience in a fine dining high volume kitchen, with at least 1 years in a leadership role
    • Culinary degree preferred
    • Ability to travel up to 70% of the time
    • Knowledge of safety and hygiene protocols
    • Working knowledge of HR practices and labor laws
    • Ability to frequently lift up to 40 pounds
    • Have the stamina to work in excess of 50 hours per week
    • Spanish language skills a plus
