The executive chef position is responsible for preparing food and beverages for distribution to patients, guests, service/dining areas, and catering services. Ensures that patient menus are distributed and collected.

Stores food, beverages, and supplies in designated containers and areas according to policies and procedures. Assures all food is labeled and dated.

Responsible for the food quality, preparation and presentation of breakfast, lunch, and dinner meals for patients, adhering to any special diets.

Assists with sanitation duties, including dishwashing and maintaining work and food service areas in a clean, safe, and orderly condition, on a daily or weekly basis.

Responsible for training and assuring that all staff use all kitchen equipment appropriately and safely. Assures all raw non pre-washed food is washed before use. Ensures employees avoid eating and drinking in the kitchen. Ensures employees wear appropriate hair covering and gloves when working with raw foods.

Regularly monitors food temperatures to assure hot food is at appropriate temperature and cold food is at appropriate temperature. Ensures staff is recording temperature logs for refrigerators, freezers, and dish machine. Fills in other shift as needed, dependent upon staffing needs of the department.

Provides regularly scheduled trainings to staff in food preparation/cooking.

Ensures caterings, cafeteria, and Doctor’s lounge are set up timely and attractively before lunch period begins.

Keeps recipes in notebook for use of other employees.

Inspects and ensures the quality of fresh produce when it is delivered.

Supports Director on all Performance Improvement measures and patient experience measures. (HCHAPS)

Collaborates with Director in meeting all regulatory compliance requirements, i.e. inspections, surveys, etc.

Determines, coordinates, and supervises daily staffing assignments,

Assesses and ensures quality of services delivered and facilitates staff development programs. Ensures staff compliance with departmental and organizational policies, procedures, and protocols.

Performs staff responsibilities as needed to fulfill required service levels.

Leads the handling and resolution of complex issues and complaints in conjunction with Director.

Prepares daily and weekend cleaning assignments and ensures cleaning is completed, and work surface are sanitized. Supervises preparation of salad bar, patient meals, lunch line, doctor’s lounge, and all caterings.

Ensures menus are delivered, checked, and picked up. Supervises cafeteria operation during the lunch period to ensure it runs in a smooth, efficient manner. Assists staff in preparing additional food when necessary.

Supervises and ensures cash controls for the department are followed; prepares deposit slips and cash deposits.

Responsible for all routine ordering for the nutrition services department.

Leads morning brief and debriefs when necessary in the department.

High school diploma/GED preferred.

Requires critical thinking skills, decisive judgment, and the ability to work with minimal supervision. Must be able to work in a stressful environment and take appropriate action.

Minimum of 2 years of significant commercial food prep experience required.

NM Food Handler’s Card must be obtained within thirty (30) days from hire.
